Light French Toast
1 tbs Skim Milk
Beat egg, milk, cinnamon, nutmeg in a bowl. Heat pan with Pam cooking spray. Lightly soak each side of the bread with egg mixture. Fry in pan for 1 minute or so on each side. Chop strawberries and cover with splenda. Top French toast with strawberries.

5oz Diet 7Up
1/4cup Fresh or Frozen Berries

Pineapple Peach Crumble with Reduced Fat Frozen Yogurt
3cups Fresh Pineapple
3 cups Fresh Peaches
3 tbs. Pineapple Juice
1/4 cup I can't believe it's not butter
1/2 cup Pineapple Cake Mix
1/2 Cup Frozen Yogurt
Grease a 11x7 dish and then put in juice. Melt butter and mix with cake mix until smooth. Lay the batter over the fruit and bake in oven for 38 minutes at 350 degrees!
Serve with frozen yogurt. Also try with frozen Greek yogurt!
Play with the fruits!
This is higher calorie dessert because of all the fruit- 333 cal for 1/8 of the crumble and 1/2c frozen yogurt. So be careful!!
Open-Faced Avacado-Bacon Tuna Melt with Sweet Potato Fries
12 oz can of Albacore Tuna light in water, drained
Reduced Fat Swiss Cheese
Mix tuna, ground pepper, and mayo. Toast bread and top with tuna mix. Add avocado, bacon and cheese. Bake 2 minutes at 425 degrees.
4 servings. Each sandwich 264 calories, 29.4 grams protein
Sweet potato fries- bought at Hy-vee McCain All Natural brand
Bake for 16 minutes at 425. I lightly seasoned them with ground red pepper and Morton's light salt.
Fiery Chicken and Mushroom Pizza (an original creation of her husband's!)
Marinara sauce (or spaghetti sauce)
Melba Toast (crumbled)
Red Hot Sauce (to taste)
Slice cooked chicken breast and coat with toast crumbles, hot sauce and spices of choice and put in toaster oven for 10 minutes at 350 degrees. Top with Parmesan cheese!
2 slices diet whole grain bread (well-toasted)
1 triangle of Laughing Cow Light Swiss Cheese
6 cherry tomatoes
Low fat mozzarella cheese
Light Balsamic vinaigrette
Crushed black pepper
Cut the two slices into four triangles.
Spread the triangle of Laughing Cow over the four halves.
Chop up the tomatoes and divide over the halves.
Sprinkle with mozzarella and drizzle with vinaigrette.
Season with oregano, basil and pepper to taste!
So quick and easy!!
A Different Kind of Salad
12 oz. of beef sirloin steak
2/3 cup bottled ginger vinaigrette salad dressing
3 cups broccoli florets
8 cups mixed spring or baby salad greens
1 green pepper
Trim the fat from the beef
Thinly slice into bite-size strips, set aside.
In skillet, heat 2 tablespoons of dressing over medium-high heat
Add broccoli. Cook and stir for 3 minutes.
Add beef. Cook and stir 3 minutes or until beef is slightly pink in the center
Remove broccoli and beef.
Devein and remove seeds from pepper.
Cut into bit-size strips
In a large bowl, combine all the ingredients.
Drizzle the salad dressing; toss to coat

Pineapple Curry Chicken
6oz Chicken Breast (skinless/boneless)
1 cup Raw Green Onion (cut into 1in. pieces)
3/4 cup Fresh Pineapple Chunks
1/2 tsp of Curry Powder (to taste...I use a lot)
dash of Garlic Powder/Black Pepper
1/4 cup water
Lightly coat a non-stick pan with Pam
Saute chicken and onions on Medium to Low heat until tender and lightly browned
Add pineapple, seasonings and water
Cover and simmer over low heat for 20 minutes
Serve with a small garden salad and drink lemon water (for that extra shot of flavor to wash it down)!
